NIG NOG BISCUITS

The boy’s favorite cookie recipe!

Pre-heat oven to 350 degrees
1 ½ cups of flour
1 ½ cups rolled oats
1 cup of sugar
1 tablespoon golden corn syrup
2 tablespoons water
1 cup of butter
½ teaspoon baking soda

Combine flour, oats, and sugar. Set aside. Melt butter with syrup and water and then add soda. Add liquid to dry ingredients. Drop by small quantities on baking sheet and flatten out. Bake for 7 to 11 minutes or until golden. These can take up to 15 minutes.

These are wonderfully crisp cookies that are great on the go or with a cup of tea.


The Boy’s Mother’s Spaghetti Sauce

Spaghetti Saturdays were a tradition for the boy’s family. He looked forward to the meal all day. It was usually served with a salad and crusty buns.

1 large onion thinly sliced
1 clove of garlic minced
1 tablespoon of butter and oil mixed
Cook the onion and garlic slowly over medium heat until soft but not brown.

Add:
1- 28 ounce tin of tomatoes with the juice
Simmer for 10 minutes.

Add:
1 teaspoon of dried basil
1 teaspoon of Italian seasoning
⅛ teaspoon of Cayenne Pepper
¼ cup Kraft Grated Cheddar Cheese Powder
Simmer for a few minutes until flavors blend and the cheese melts into the sauce. Serve over cooked spaghetti.

This is the original recipe given to Maureen Haddock soon after she married “the boy” in 1970. Family members have added mushrooms, green peppers or even meatballs to this basic recipe.


The Boy’s Mother’s Macaroni and Cheese

This recipe has evolved over the years and the boy’s mother no longer uses Velveeta cheese in the recipe. The boy still believes that the original recipe is the best. The secret to this recipe is to grate the onion so finely that you can barely identify it.

2 cups macaroni raw
½ a medium onion, grated
½ a tin of Campbell’s Tomato Soup
¾ of a cup of grated Kraft Velveeta cheese
¾ of a cup of grated cheddar cheese

Cook the macaroni. In a casserole, layer some of the cooked and drained macaroni, then some grated onion, some soup, and then some of each type of cheese. Repeat this until the ingredients are used up. Bake uncovered in the oven for ½ an hour at 325 degrees. This recipe is easily doubled.
